Roasted Butternut, Tofu and Red Onion with Sweet Soy Glaze 1 lb butternut squash, cubed 12 oz firm tofu 8 oz red onion, diced 1 tbsp coconut oil ¼ cup shoyu soy sauce 3 tbsp agave syrup 2 tbsp peeled fresh ginger, minced 1 tbsp brown rice vinegar 1 garlic clove, minced ½ tsp toasted sesame oil Preheat the oven to 400 degrees. Put the squash, tofu and onion in a large roasting pan. Drizzle them with the coconut oil and toss to coat. Cover with foil then roast for 20 minutes. Toss occasionaly. Roast until tender when pierced with a paring knife and golden brown. In a small cup stir together the shoyu, agave syrup, ginger, vinegar, garlic and sesame oil. Pour the mix over the contents of the roasting pan and toss to coat. Roast, uncovered, until the liquids are absorbed and the pan is nearly dry, 5 to 7 minutes. Serve hot.

½ cup brown sugar 14 oz canned coconut milk 2/3 cup water 1 cup water In a small saucepan combine 2/3 cup water and the sugar and bring to a boil over high heat. Stir until the sugar is dissolved then cook for 2 more minutes. Reduce the heat to a simmer. Remove the pan from the heat and let the syrup cool. When it is at room temperature, stir in another cup water and the coconut milk. Transfer the mixture to a storage container and refrigerate for at least 4 hours. Pour into an ice-cream maker and freeze according to the manufacturer’s directions. Serve immediately.
