Spread 2 tablespoons jam evenly over tortilla then put 2 tablespoons almond butter on center 1/3rd of the tortilla. Leave ½ inch bare at each end.
Mix together apple, dates/dried fruit, almonds, and cinnamon then divide the mixture between the tortillas. Fold in the bare ends and then roll up each burrito.
Prepare the marinade by mixing all ingredients, but of course the bef. Rub the filet with the marinade and let rest for 2 hours, turning occasionally.
Preheat the oven to 400 degrees.
Place the filet in a roasting pan and bake for 20 minutes for rare, 25 minutes for medium rare or 30 minutes to well done. Remove from the oven and let rest before slicing.
Meanwhile, chop the kale, discarding the stems. Place in a stockpot and add a splash of beef broth to steam. Cover and simmer. Once the greens are tender, season with sea salt and black pepper.
