4 Easy Low Calorie Nutritious Breakfasts

Do you eat breakfast every day? You know you should, right? Didn’t your mom always tell you that breakfast is the most important meal of the day? She was right. Trouble is, what moms in recent generations thought were low calorie nutritious breakfasts were actually set ups for you future health concerns.

Fast forward to now and I bet if you do eat breakfast it is still rooted in those bad habits you learned growing up. And for many more still, I bet you don’t eat breakfast at all! Can I see a show of hands?

Let’s change this reality now. Today is the first day of your life of eating a nutritious breakfast every day. After all, this is the your first fuel and it sets the tone for the day.

So, with that goal in mind, I decided to offer you 4 easy low calorie nutritious breakfasts to start your day. They will break the mold of “tradition” and give your body the balance and fuel it needs to start the day out right.

Toss out those toaster pastries, leave the bagel at the store, forget the donuts and the boxed cereal and get yourself ready to tantalize the taste buds, fill you tummy and fuel your body and mind with some fresh, new, easy and nutritious breakfast choices! 

Banana Cranberry –Seed Breakfast Bars

1 cup oats, uncooked

½ cup whole oats

1 egg, beaten

¾ cup oat milk, plain, unsweetened

1 ripe banana, mashed

½ cup dried cranberries

2 tablespoons sunflower seeds

2 tablespoons ground flax seed

1 teaspoon cinnamon

1 teaspoon agave syrup

1/8 teaspoon sea salt 

Preheat the oven to 350 degrees.

Grind 1 cup oats in a food processor until they become a course meal. In a glass bowl, combine ground oats with 1/2 cup whole oats, beaten egg, oat milk, banana, cranberries, flaxseed, sunflower seeds, cinnamon, agave, and sea salt.

 Spoon batter into a baking dish greased lightly with coconut oil. Bake 12 to 14 minutes.

Blue Thunder Smoothie

2 tablespoons whole flaxseed
1 ripe banana
1 cup blueberries
½ cup Greek yogurt
1 cup oat milk
1 tablespoon raw honey
¼ teaspoon almond extract
6 ice cubes
2 scoops whole foods whey protein powder

Place the flaxseed in a blender and blend until it is ground. Add the rest of the ingredients and blend until smooth.

Chai Tea Oatmeal with Stewed Peaches

1 Chai tea bag

½ cup boiling water

½ cup oat milk, plain, unsweetened

½ cup steel cut oats

1/2cup fresh sliced peaches, stewed with a pinch of sea salt

1 tablespoon chopped pecans

2 tablespoons raw honey 

Soak the oats in water overnight at room temperature. 

Steep the tea bag in boiling water for about 3 minutes. 

Then combine tea with oat milk and the soaked and oats in a medium stock pot. Simmer on low heat until tender and thickened. 

Remove from heat and cool slightly. Then stir in the raw honey. Top with stewed peaches, add pecans. 

Smoked Salmon, Arugula and Avocado on Sprouted Grain

1/3 avocado, mashed with a squeeze of fresh lemon juice, seasoned with sea salt and pepper

a small handful of baby arugula

2 slices of toasted sprouted grain bread

2 ounces of quality smoked salmon

Spread the avocado mash on 2 slices toasted sprouted grain bread. Top each slice of toast with arugula and smoked salmon.
